Salads in a jar have been on my radar for a while.  Whoever was the first to invent the idea is a genius.

It is such a fantastic idea that you can throw a bunch of veggies in a jar with the dressing on the bottom, then shake when you are ready to eat, and that’s all!! It couldn’t be easier to make and eat, you can even eat it out of the jar to save on dishes!

I have been getting a bunch of lovely local kale and green beans, and combining them in a salad like this is just what I have needed.  I totally have a case of the summer lazies, where I kind of just want to lay in the sun and read books for most of my day.  So a whole meal ready in no time and perfectly portable for work or the beach?  Perfect!  Sign me up.

It’s been one of those times for me where I have felt like I am so busy and cooking anything complicated is just not going to happen.  But if I am being honest I am pretty sure its just that I have been giving leisure things priority.  And you know what?  I think that is just fine.  That is why I love 10 minute meals.

Health highlight of green beans:  Green beans are very high in antioxidants, including carotenoids, which have been linked to healthy glowing skin.  The antioxidants also support a healthy heart, helping to protect against cardiovascular disease.  Green beans contain minerals that are important for bone health.  They are anti-inflammatory, very low in calories, and are a good source of protein!  They even contain a small amount of omega-3 fatty acids!!

Bean Salad in a Jar

Serves: 2-4
 
My take on a salad in a jar. Lunch has never been so easy!!
Ingredients
  • 4 tablespoons Lemon Juice
  • 2 tablespoons EV Olive Oil
  • 3 cups Kale (remove stems and chopped)
  • 1 can Beans (cannelini, chickpea, or navy) Drained and Rinsed
  • 1 lb Green Beans (about 2 cups) steamed or raw – however you like em!
Instructions
  1. Start out with 2 clean 1 quart jars with lids
  2. In each jar add 2 tablespoons lemon juice and 1 tablespoon olive oil
  3. Add half the kale to each jar, followed by the beans, and green beans
  4. Screw on the lid, and stash in the fridge until you are ready to chow down
  5. When it’s lunch time take the jar from the fridge and give it a good shake to dress the whole thing with the lemon and olive oil
  6. When its all shaken, pour the contents into a large bowl (it is a generous portion of salad!)
  7. Eat up and enjoy!!
