When we were in Disney we had dinner one of the nights at Germany in Epcot. The food was amazing. I love German food, but it can be kind of meat heavy so I was a little worried there wouldn’t be much food for me at the restaurant.
Because I think everything in Disney is perfect (they do that on purpose so I keep going and spend all my money – not that I am complaining!!), it was a buffet, and absolutely packed with amazing veggie food!! It was so good!! One of my favorite things was the beet salad, in fact it was not only my favorite but also a favorite at the table!!
So this is my take on it. It’s quite good, if I may say so. Filling yet light and refreshing. I might be obsessed.
I have been keeping these ingredients around ever since I first made it, I have a habit of hoarding things like cans of lentils and beets and avocados. Normal stuff to hoard, I think.
Hubby got sick after we got home from Disney, and I made this for him and he said it felt good on his sore throat and it made him feel better.

- 8 small Beets (cooked halved and sliced) I buy the already cooked and peeled ones like these
- 1 Cucumber (sliced)
- 1 Shallot (sliced very thin)
- ¼ cup Red Wine Vinegar
- 1½ Avocados (diced)
- Salt and Pepper (to taste)
- Combine all the ingredients in a medium bowl
- Toss to combine and season with salt and pepper
- Dish up and eat up!!!
