I’ve never been huge on the flavor of yogurt. But when hubby made this recipe, I fell in love with it! I think the full fat Greek yogurt made all the difference. Don’t fear the fat. In fact there is some research that suggests that if you are going to eat dairy that it is more healthful to eat a fuller fat dairy than a lower fat due to the protein content. The fat also helps when you are using this with veggies because it helps you absorb more nutrients.
As of late I have been loving substituting full fat greek yogurt for sour cream. It works so beautifully and seriously cuts back on the total calories and adds the healthy probiotics.
Health highlight of yogurt: Pretty much every time I see a list of healthy foods, like foods you should be eating, or the healthiest foods for breakfast, the list almost always lists yogurt. These days most everyone knows that probiotics=good. And yogurt is fermented using probiotics. Yogurt has been shown to improve your immune system, help to keep your weight in check, aid digestive functions, and even elongate your life!! (Some recent research is linking the consumption of fermented foods with a longer lifespan!)
- ⅓ cup full fat Greek Yogurt
- 1 tablespoon Red Wine Vinegar
- 1 teaspoon diced Shallot
- 1 tablespoon finely chopped Parsley (chopped then measured)
- ¼ cup Blue Cheese crumbles
- Salt and Pepper to taste
- In a bowl combine all the ingredients
- Stir well to combine
- Taste for seasoning, add salt and pepper to your liking
- Ready to use!
