Cheesy Oats (Savory Oatmeal) 1

You know how there are some nights when you don’t even have the energy to order food?  I feel like that happens to everyone from time to time, and this is totally what I make on those nights.

I also find myself making it on weekend mornings when I get out of bed, sit on the couch, and stay there until I am super hungry and can’t decide what to make.  Really, this works for breakfast, lunch or dinner.  Which is kind of rare to find in one dish, and totally awesome.

Plus sometimes you want something savory that isn’t eggs.  And you can throw any veggie you want in here.  The perks of this dish are just endless!!

Steel cut oats are heavenly, if you haven’t had them before you should try them.  They have a really satisfying chewy texture, and they release their starches as they cook thickening up the water in this really magical way.  They take a bit longer to cook than rolled oats, but it is passive time so I feel like it doesn’t really count.  It gives me an excuse to sit on the couch and cozy up with a book because technically I am “cooking breakfast” and therefore can’t do anything else productive with my time.  I am a firm believer that relaxation is key to keeping your life in balance.

My favorite thing about this dish is that it is warm, creamy, cheesy, filling and also pretty darn healthy.  You even get your serving of leafy greens!!  I am an arugula addict, but if you prefer spinach or swiss chard or any other green feel free to sub it in here!!

Health highlight of arugula: Arugula is good for digestion, and a great source of iron, vitamin C, folic acid, and beta carotene.  Arugula helps your body fight inflammation, promote detoxification, and strengthen the immune system.  It also contains potassium, which can help reduce blood pressure.  Technically it is an herb, and has a peppery bite that is really satisfying (even if you don’t like pepper or spicy foods).

Cheesy Oats (Savory Oatmeal)

Serves: 2-4
 
Ingredients
  • 3 cups Water
  • 1 cup Steel Cut Oats
  • ½ cup sharp Cheddar Cheese (shredded then measured)
  • 2 cups Arugula (lightly packed)
  • 1 tablespoon Lemon Juice (optional)
  • Olive Oil to drizzle (optional)
  • Salt and Pepper (to taste)
Instructions
  1. Bring the water to boil in a medium pot
  2. Add the oats, place a lid on the pot and reduce the heat to low
  3. Set a timer for 25 minutes
  4. After 25 minutes give the oats a good stir
  5. Add the cheese, arugula and lemon juice
  6. Stir well, taste for seasoning
  7. Dish up, drizzle with a little olive oil and enjoy!!!!
