Vegan Cherry Almond Smoothie 1

Remember that time I ate deep fried oreos? Yeah, that totally happened last weekend.  I was at a friends wedding, and they had deep fried oreos… next to a chocolate fountain.  I think saying the wedding was amazing is unnecessary.  Deep fried oreos and chocolate fountains do all the talking.  But also, after the whole thing was over, there was a station by the door giving you cookies and soft pretzels for the car ride home!!

Due to this indulgence in a few of said fried oreos (thank goodness for tiny plates or I would have had more than just a couple) the theme of this week has been focus on super healthy food.  Smoothies are my favorite because you can sneak in some super healthy leafy greens and trick yourself (and others) into eating them.  Smoothies for the win!!

Can we talk about my mason jar obsession for a minute?  Because these things are the best inventions ever ever.  I got a ton of the bigger ones, and make a big ole batch of smoothie in the morning and give one to hubby and keep one for me.  The jars are huge, and I can screw on a lid and toss it in my bag and it’s totally happy there until I get to it at work.  I even use them for water bottles when we go out with friends to be athletic!! They are glass, but still quite durable.  The one in this pic is the smaller version (which to be honest is a little small for smoothies for my liking, I like the huge-o ones) but they do have the hole in the cap going for them!  You can get them here if you would like to join the mason jar collecting club with me!! Health highlight of cherries: cherries are high in antioxidants and phytochemicals, especially the antioxidant anthocyanin.  This antioxidant is thought to be responsible for cherries anti-inflammatory properties.  In studies, eating cherries has shown to help relieve pain, especially in arthritis sufferers and muscle pain.  They can help reduce the risk for cardiovascular disease and other chronic illnesses as well.  They even contain a natural melatonin, which helps regulate your sleep!! Magical little fruits, huh!?

Vegan Cherry Almond Smoothie 2

Cherry Almond Smoothie (Vegan)
Prep time:

Serves: 2
  • ¼ cup Almonds
  • 2 cups Water
  • ⅛ teaspoon Almond Extract
  • 2 cups Cherries (pitted and frozen)
  • ½ Banana (I used a frozen banana)
  • 1 cup Blueberries (frozen)
  • 1 cup Baby Spinach (optional)
  • 1 cup Ice
  1. In a blender combine the almonds and water
  2. Blend until white and the almonds are mostly broken down
  3. Add the almond extract, cherries, banana, blueberries and spinach and ice and blend until smooth
  4. Add additional water to thin, or ice to thicken
  5. Serve and enjoy!!
