Ice cream is amazing.  It’s just a fact of life.  It’s why some people try to pretend like going on an ice cream only diet is a good idea.  I mean it does sound awesome!

But you know what’s also awesome?  Enjoying your favorite flavors in a way that is easy and you can make at home.  Then you can also add lots of real fruit and control how much of everything you want (for me it’s lots more chocolate, for hubby it’s less chocolate and more cherries).  I even like to sprinkle chia seeds on top and call them sprinks.  I love it!!

So now that it is officially Spring, I can’t wait to go do Springy things like pick out the things I will try to plant this year (maybe with the help of Kiersten’s amazing blog I will have better success this year).  I am also craving some good old vitamin D so perhaps a hike is in my future this weekend.  If you have some Springy things going on this weekend or suggestions to jump into Spring with both feet I would love to hear about it!! :) Hope you have a fabulous weekend!!

Health highlight of cherries: cherries are high in antioxidants and phytochemicals, especially the antioxidant anthocyanin.  This antioxidant is thought to be responsible for cherries anti-inflammatory properties.  In studies, eating cherries has shown to help relieve pain, especially in arthritis sufferers and muscle pain.  They can help reduce the risk for cardiovascular disease and other chronic illnesses as well.  They even contain a natural melatonin, which helps regulate your sleep!! Magical little fruits, huh!?

Cherry Garcia Yogurt (Vegan Option)

Serves: 4-6
 
Ingredients
  • 2 cups fresh, pitted Cherries (frozen, thawed will work too)
  • 2 cups Yogurt (non-dairy for the vegan option)
  • Maple Syrup to taste (I used 1 tablespoon)
  • ½ teaspoon Vanilla extract
  • ¼ – ½ cup Chocolate Chunks (this is a great vegan one)
Instructions
Got a food processor? Put it to work :)
  1. In a food processor bowl fitted with the blade, add the cherries, yogurt, maple and vanilla
  2. Pulse until the cherries are chopped, but still have some texture
  3. Stir in the chocolate chunks and serve!!
No food processor? No problem!!
  1. Chop the cherries well
  2. Stir them up with the yogurt, maple, vanilla and chocolate
  3. Give yourself a nice big scoop and enjoy!!
