I suddenly remembered a few weeks ago that fresh cherries existed. Upon remembering I proceeded to look up my produce purchase history to find when I get to stuff my face full of these perfect little fruits.
I realized it was May, and it was a week later that I got my hands on some. I told you guys about it on Facebook, and there was a general consensus that cherry time is the best time ever.
I really wanted to make a recipe with them, but it seemed like cooking them might be against the rules of life. Because I really think they are so good just pitted in a bowl. Because pits just slow me down. (Insert joke about pits being the pits here.. I love a good pun guys!!)
We ate so many cherries last year that the little hand held cherry pitter that does one at a time no longer cut it. I bought this amazing cherry pitter that I am 100% in love with. If you also love cherries, I can’t recommend it enough. It’s less then $6 (at the time of this post) and couldn’t be more worth the money.
So instead of posting a recipe of: ingredients – cherries, instructions – eat… I decided to add some of my favorite cherry accompaniments to make it a cherry party that we should all go to. I have had this every night since!!
Health highlight of cherries: cherries are high in antioxidants and phytochemicals, especially the antioxidant anthocyanin. This antioxidant is thought to be responsible for cherries anti-inflammatory properties. In studies, eating cherries has shown to help relieve pain, especially in arthritis sufferers and muscle pain. They can help reduce the risk for cardiovascular disease and other chronic illnesses as well. They even contain a natural melatonin, which helps regulate your sleep!! Magical little fruits, huh!?
- 2 cups (12 oz) Cherries – pitted and lightly chopped
- 2 oz Dark Chocolate – chopped (I used 85% which was perfection, this is my fave kind)
- ¼ cup Almonds – chopped (I used raw)
- Maple Syrup – to taste (depending on how sweet your cherries are, I used a teaspoon.. you could omit all together if yours are perfect on their own)
- In a large bowl combine all ingredients
- Toss well, dish up, dive in!! Enjoy
