I am pretty excited Valentine’s Day is next week.  I will take any excuse to eat chocolate.

I know chocolate covered strawberries are the classic at this time of the year, but these are better.  Clementines are a lot less expensive right now, they are fresh and super sweet and in season, and when you bite through the chocolate you get a wonderful burst of juice that makes the whole experience really joyful.  And yummy.  Can you tell I am smiling about these right now?  I am also thinking about going back to the fridge to sneak a few more…

And with this cold weather I am also trying to bring some sunshine into our home, which is why I am super into citrus right now.  I was hoarding clementines for a while because I had been planning on making these, but when I finally did yesterday morning, I could barely wait to take the pictures before I started digging in.  They are really good, and super cute too.

This is the perfect way to tell anyone you care about them.  There is a lot of love in each bite.

Health highlight of chocolate:  Being a serious chocoholic myself, I love reading the studies about how healthy chocolate is for you. 70% cocoa solids or higher is best, as it means less sugar and other non chocolate additives in there (the percentage refers to the cocoa solids meaning the stuff that comes from the bean – 100% is unsweetened chocolate). Research suggests that people who eat chocolate regularly tend to have a lower BMI. Chocolate can help lower blood pressure, and reduce the risk of heart disease.  It contains healthy antioxidants and flavonoids, and has been shown to have a beneficial effect on cholesterol.

Chocolate Covered Clementines

Ingredients
  • 4 Clementines
  • 4 ounces Chocolate (I like 70% dark chocolate)
Instructions
  1. Peel the clementines and separate them into segments
  2. Chop the chocolate
  3. Put the chopped chocolate in a microwave safe bowl
  4. Microwave the chocolate for about 45 seconds
  5. Stir it really well
  6. If it is not fully melted after a really good stir microwave for another 30 seconds
  7. Stir it again, for me after stirring it really well after this zap in the microwave it was done, if yours isn’t then continue microwaving for 15 and stirring until it is melted
  8. Dip the clementine segments into the chocolate
  9. Refrigerate until the chocolate is set, or until you are ready to serve
  10. Enjoy with a smile!!
