One of my favorite little tricks to healthy sweets is banana soft serve.  It turns out that if you put a frozen banana into the food processor, out comes banana soft serve.  No magic wand needed! (Though they never hurt, right?)

Hubby sometimes catches me standing in the kitchen with my nose in the can of espresso before I make him a pot in the morning.  While I realize I must look like a serious weirdo, I am totally ok with it.  The smell is heavenly, and like aromatherapy for me.  It reminds me of weekends and leisure so one whiff instantly puts me in that mind set.

But I don’t do too well with coffee.  I generally tend to be a really high energy person, and coffee (even tea with caffeine) makes me really jittery and it does not feel good (it even gives me anxiety.)  But I can enjoy the smell all day!!

I do like adding a little coffee to my food sometimes, mocha things equal Alissa smiles.  And although I usually like a little chocolate something along with it, coffee is one of my favorite ice cream flavors.  Bananas and coffee also go really well together.  You see where this is going…  I like to call it yummy town (I don’t really call it that.  Maybe we should pretend I didn’t call it yummy town?)

Health highlight of bananas:  Bananas are known for being a good source of potassium.  Potassium is an important nutrient because it helps lower blood pressure, and is used in the process of muscle contraction and nerve communication.  It is also helpful in the balance of pH in the body, and so also can help prevent the loss of calcium.  Bananas are a good source of soluble fiber which helps to lower LDL (“bad”) cholesterol and can be helpful in the regulation of blood sugar.  Bananas have also been shown, because of the synergy of a few nutrients, to be very helpful in stomach upset.

Coffee Banana Soft Serve (vegan)

  • 2 frozen Bananas (peel the bananas when they are ripe, then place the peeled bananas in the freezer in a zip top bag overnight)
  • 1 teaspoon Instant Espresso Powder (I use decaf)
  • ½ ounce Chocolate (optional) (chopped – about 1 tablespoon)
  1. Cut the bananas into 4
  2. In the bowl of a food processor add the frozen bananas, instant espresso, and chocolate
  3. Run until it becomes smooth and the consistency of soft serve ice cream, stopping to scrape down the sides a couple of times
