10 minute meals are my favorite.  I wish all cooking only took 10 minutes.  Obviously I love cooking and playing around in the kitchen, but meals that take less time are just so much easier.  This one is a joy for that reason.  It honestly takes you far less time to make than you would spend ordering and getting take out.  Perfect since everyone gets much busier at this time of the year with school starting back up, and everyone much busier as people shake off the laid back summer attitude.  Oh how I wish that laid back attitude would stay forever!!

When I was in 7th grade I had an obsession with ordering sesame noodles.  It feels really strange that I remember that, but clearly food has always been a big part of my life.  I find sesame noodles to be comfort food, and we all need comfort food from time to time.  Comfort food in 10 minutes: it’s a miracle I don’t live exclusively on these.

A factoid I find pretty interesting is that ounce for ounce, the most common variety of tahini has about 3 times the calcium content of milk.  So if you are a vegan and people ask you how you get your calcium you can just give them this recipe! ;)

Are you gluten free?  This is great using gluten free spaghetti, just make sure you use gfree soy sauce.  I was surprised that wheat products somehow snuck their way into most soy sauces, but I had an easy time finding a gluten free soy sauce (which honestly was tastier).

Health highlight of cucumbers:  Despite being one of the most farmed veggie in the world (it’s #4) there haven’t been a lot of studies done on cucumbers for their nutritional and medicinal properties.  What we do know is that cucumbers have strong antioxidant and anti-inflammatory properties.  Which is awesome news since these are vitally important to long term health and wellness.  We also know that the combination of nutrients in cucumbers has been shown to prevent cancer.

 

Ingredients:

1 lb Spaghetti (I used gluten free spaghetti )
½ cup Tahini
¼ cup Soy Sauce
½ teaspoon Sriracha
1 tablespoon Lemon Juice
2 Cucumbers – shredded
2 stalks Green Onion (scallions) – sliced

 

Easy Instructions:

  • Boil the spaghetti
  • Mix the tahini, soy sauce, sriracha, and lemon juice together in the bottom of a large bowl
  • Add the cooked spaghetti to the tahini mixture
  • Add the cucumbers and green onion and toss to coat and combine
  • Serve and enjoy!!

Detailed Instructions:

  • Start the water for the pasta
  • Mix the tahini, soy sauce, sriracha, and lemon juice together in the bottom of a large bowl
  • Add the spaghetti to the pot and cook about 7 minutes (check your package, it might very by brand)
  • Shred the cucumbers and slice the green onions
  • Drain the spaghetti
  • Add the cooked spaghetti to the tahini mixture
  • Add the cucumbers and green onion and toss to coat and combine
  • Serve and enjoy!!
