Date Night Kale Salad 3

With Valentine’s Day coming up this week, I just had to make some kind of dish with dates.  I love puns too much to pass up on this opportunity.

A couple of weeks ago I took a work trip to Nashville, where I had a kale salad that I have been completely obsessed with ever since.

I love kale, but since it is one of the few things that is fresh, organic, and beautiful in the middle of winter.. I have had my fair share of kale this year.  I think I have made Kale and Lentil Soup almost once a week.  So I was really excited to have this new breath of kale salad obsession.  I guess you could say I fell in love with kale all over again.. (please forgive me for being such a cheeseball!)

What I really love about this salad is that it sticks with pretty normal ingredients, but together the flavor is so good!! And I am really loving finely chopped kale for salads.  I think it makes the flavor a little more mild, and what is so great for date night is that you can make this in advance, it won’t get soggy.  So make it a few hours before date night and then you can spend the whole time staring into each others eyes, or maybe something less creepy.  This might be why I don’t give dating advice…

This one is definitely hearty enough for a main dish, hubby and I have had this a few times as a meal and it has been perfect and super satisfying.

Health highlight of kale: There is a nutrition rating system that was created by a doctor called the ANDI system that rates foods based on how rich a food is in vitamins, minerals and phytonutrients per calorie. This system gives the highest possible score awarded (1,000) to only 2 foods: kale and collard greens. While some believe the system is flawed, it does certainly demonstrate the nutritional significance of kale. Kale is high in antioxidants, is anti-inflammatory, and supports the body’s detoxification. The nutrients in kale are associated with cardiovascular health, reduced risk of cancer, and reduced risk of other age related diseases.   It is a good source of iron and calcium, and can aid digestion.  The growing popularity of this veggie is well deserved with all this healthy stuff packed in there!

  • 2 bunches Kale (remove stems and chop fine, I did it in the food processor)
  • ¼ cup Mint
  • ½ cup Kalamata Olives (roughly chopped)
  • ½ cup Almonds (roughly chopped)
  • ¼ cup chopped Dates
  • ¼ cup dried Cherries
  • Juice of 1 lemon
  • 2 tablespoons EV Olive Oil
  1. Combine all the ingredients in a bowl
  2. Toss well to combine
  3. Serve and enjoy!!
