Looking for something cold, sweet, healthy and speedy? Look no further! I have an ice cream maker, but have to admit it’s a bit of a pain to use. I am in the throw-everything-in-the dishwasher-even-if-I-am-not-supposed-to camp, but you really can’t throw the bowl of most ice cream makers into the dishwasher, like for reals no cheatsies. So there’s that, and the bowl has to be frozen, which takes up a lot of room in the freezer. It makes it so that I don’t like to whip out the ice cream maker. SO, I found a way around it. The awesome part is that you really don’t need to add sugar. Watermelon is perfect on its own!
If you need to add more liquid than called for below, feel free to add it a little at a time. I cut the watermelon a little on the big side and had to got to town on it with a hammer, so cut it small and lay it in a flat single layer when freezing it. Or don’t and have a therapy session and sweet treat all wrapped up into one!! Looks a little like meat in this picture, which is strange.. but its watermelon! Promise!
Health highlight of watermelon: though you might expect watermelon to be mostly water (I did!) it is actually a super nutrient packed food! It contains lycopene, the healthy antioxidant known for being found in tomatoes, and which has been linked to reducing your risk of cancer and disease. In fact, watermelon contains about 1 and a half times more lycopene than fresh tomatoes! Watermelon is also anti-inflammatory, full of other powerful antioxidants, and other carotenoids that can help your skin look glowing and beautiful.
Optional add on/ins: Mint (fresh: about 10 leaves), orange juice (sub for the water), or chocolate (because everything is better with chocolate).
- ½ Watermelon (cut into small chunks and frozen)
- ½ cup Water
- Add the frozen watermelon chunks to the food processor or blender
- Mix until smooth and sorbet texture (you might need to stop it and scrape it down a few times)
- Scoop and enjoy!
