Pina Colada Sorbet

  • 1 Pineapple, cored and frozen (about 20 oz)
  • ¼ cup Coconut Milk
  • ¼-1/2 cup water
  • Maple (optional, to taste - depends on how sweet your pineapple is)
  1. In a food processor add the pineapple and coconut milk
  2. Turn the food processor on and let it run, chopping up the pineapple well
  3. When it gets to be the texture of shaved ice, add the water, a little at a time until it comes together like the texture of sorbet
  4. Taste, add maple if needed (I added 1 tablespoon) mix in
  5. Serve up and enjoy!!!!!!
