Vegetarian Slow Cooker Lentils

Ingredients
  • 1½ cups Green Lentils (rinsed)
  • 4 cups Vegetable Broth
  • 1 Onion (diced)
  • 2 small Sweet Potatoes (cut into large chunks)
  • 4 tablespoons Green Curry Paste (I used this one)
  • 2 cups fresh Spinach (tightly packed, any leafy green is lovely like swiss chard, or kale)
  • Salt (to taste)
  • Optional toppings: Coconut milk and fresh lime juice
Rice, optional, to serve
Instructions
  1. To the bowl of a crock pot add the lentils, broth, onion, sweet potatoes, and curry paste
  2. Turn the crock pot to high and cook for about 3½ hours, or until most of the liquid is absorbed and the lentils are tender
  3. When the lentils are done, stir in the spinach
  4. Taste and add salt as needed
  5. Top with some coconut milk and/or a squeeze of fresh lime
  6. Dish up and enjoy!!
