Pasta with Green Beans and Chili Garlic Sauce

Serves: 2-4
  • 8 oz Pasta (1/2 lb) - Any shape you fancy
  • 1 tablespoon EV Olive Oil
  • 8 oz Mushrooms (I used oyster, any kind would be perfect)
  • 4 cloves Garlic
  • 1 lb Green Beans (trimmed and cut into bite sized lengths)
  • 1 teaspoon Honey
  • 3 tablespoons Soy Sauce
  • ¼ cup Vegetable Broth
  • ¼ teaspoon Sriracha (or red pepper flakes) - to taste, adjust up for more heat or omit if you are not huge on spice
  1. In a medium pot boil the pasta in water (according to the package)
  2. In a large saute pan add the oil and the mushrooms, cook until the mushrooms begin to brown, about 5-8 minutes
  3. Add the garlic and cook until it just starts to get golden
  4. Add the green beans, honey, soy sauce, vegetable broth, and sriracha
  5. Stir well and let cook until the green beans soften a little (should be another 5 minutes or less)
  6. Once the pasta is done, drain it and add it into the pan with the veggies and sauce
  7. Toss to combine
  8. Taste for seasoning, add salt and/or soy sauce if needed
  9. Don't forget to add a pinch of love and enjoy!! ;)
