Butternut Squash Fried Rice

Serves: 4-6
  • 1 cup Brown Rice (dry)
  • 2 cups Water
  • 2 teaspoons EV Olive Oil
  • 1 small Butternut squash (peeled and diced)
  • 2 cloves Garlic
  • 8 oz Mushrooms (I used oyster, but white or crimini would be perfect too)
  • 1 bunch Green Onions
  • 1 Green Bell Pepper
  • 3 tablespoons Soy Sauce
  1. In a medium pot bring the water and rice to a boil
  2. Add the lid and reduce to a simmer, cook for about 30 minutes or until the rice is tender
  3. In a large pan add the olive oil and butternut squash
  4. Saute until tender, about 7 minutes
  5. Add the garlic and cook until it gets fragrant, about 2 minutes
  6. Add the mushrooms, green onions, and bell pepper and cook another 3 minutes
  7. Once the rice is done cooking, add to the pan and fry up stirring occationally for about 5 minutes
  8. Stir in the soy sauce last and serve!
