Vegan Quinoa Chestnut Stuffing

Serves: 4-8 (4 main, 8 side)
  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 small Onions (diced)
  • 4 ribs Celery (diced)
  • 2 Carrots (diced)
  • 1 cup (7oz) Peeled Roasted Chestnuts (I buy these, they are awesome and easy)
  • ¼ teaspoon Dried Sage
  • 2 tablespoons Fresh Parsley (chopped then measured)
  • Salt and Pepper (to taste)
  1. In a medium pot bring the Quinoa and Vegetable Broth to a boil
  2. Reduce heat to low, put a lid on the pot and set a timer for 20 minutes
  3. While the quinoa is cooking, in a large skillet add the EV Olive Oil and the Onions
  4. Saute until the onions begin to soften, about 4 minutes
  5. Add the Celery and Carrots, continue cooking until those become tender, another 5 minutes
  6. Add the Chestnuts, Sage, and Parsley
  7. Season to your liking with salt and pepper
  8. Once the quinoa timer goes off add the quinoa to the skillet with the veggies
  9. Stir well to combine
  10. Serve and enjoy!!
