Raw Fennel Salad with Grapefruit (vegan)

A crisp salad that will bring some sunshine to your winter
  • 3 small bulbs Fennel
  • 1 medium Shallot
  • 2 Grapefruits (peeled then sliced)
  • 1 Jalapeno (remove seeds and ribs and slice thin)
  • 2 tablespoons Basil (chopped roughly)
  • ½ Grapefruit (juiced)
  • 1 tsp raw Honey (if you don't eat honey, sub for maple syrup)
  • 2 tablespoons EV Olive Oil
  • 1 Avocado (diced)
  • Salt
  1. In a food processor or carefully with a knife slice the fennel and shallot thin
  2. In a medium bowl add the sliced fennel, sliced shallot, sliced grapefruit, sliced jalapeno, basil, grapefruit juice, honey and olive oil
  3. Toss well to coat
  4. Add the avocado and toss again carefully
  5. Salt to taste
  6. Serve!
