Vegan Caprese Salad

  • 4 Tomatoes
  • 1 large Avocado (or 2 small)
  • ¼ cup Basil
  • ½ teaspoon Sea Salt (adjust up or down according to your preferences)
  • 1 clove Garlic (minced or pressed through a garlic press)
  • 2 tablespoons Red Wine Vinegar
  • Black pepper - to taste
  1. Dice the tomatoes and avocado
  2. In a medium bowl combine them with the basil, salt, garlic, vinegar and black pepper
  3. Stir to combine
  4. Allow to sit about 5 minutes to let the flavors marry
  5. Taste, add more salt or vinegar if needed
  6. Serve and enjoy!!
