If fruit salad was a song, it would be my theme song for this summer. I know that made no sense, but lets just go with it. I am still riding the high of summer so I am not sure any of my last several posts have made any sense.
I have brought fruit salad to almost every BBQ this summer. It’s been amazing because I get to share my obsession, and have a sweet treat that helps me avoid all the cupcakes.
I have come to wish that every restaurant served fruit salad as dessert. Can we make this happen somehow? Because it sounds awesome. I am ready to make a long term commitment to fruit salad so I can let cupcakes and brownies down easy.
Health highlight of watermelon: though you might expect watermelon to be mostly water (I did!) it is actually a super nutrient packed food! It contains lycopene, the healthy antioxidant known for being found in tomatoes, and which has been linked to reducing your risk of cancer and disease. In fact, watermelon contains about 1 and a half times more lycopene than fresh tomatoes! Watermelon is also anti-inflammatory, full of other powerful antioxidants, and other carotenoids that can help your skin look glowing and beautiful.
- 2 cups Watermelon (diced)
- 2 Nectarines (or peaches) (diced)
- 2 Plums (diced)
- 1 tablespoon Fresh Mint (chopped then measured)
- 2 teaspoons Maple Syrup
- Stir all the ingredients together in a large bowl
- Dish up or stash in the fridge
- Eat up and enjoy!!
