		<description><![CDATA[Sometimes, when I am having a had time coming up with new recipes to make (it&#8217;s not that often to be honest because I am lucky enough to be married to a genius) I look to restaurant menus for inspiration. This particular recipe was inspired by the Pasta Da Vinci at The Cheesecake Factory.  Now, I have never had the pasta da vinci at the cheesecake factory.  In fact, I can count on one hand the number of times I have been to the restaurant chain, but I looked at the description and ran with it. I had two bunches of asparagus burning a hole in my pocket and I needed a way to use them! (That&#8217;s not really an expression, but I went for it anyway) Ever since that sign went up in front of the farm that their homegrown asparagus was in, I have been buying it like it was my job.  Could that be my job? 		<description><![CDATA[Today I am going to be constructively deconstructive. Because realistically, I am probably not going to roll my own sushi.  I mean, I think it sounds like a ton of fun, and I am sure I would get a lot of laughs at how hilariously bad I would be at it&#8230;I mean just yesterday I was experimenting in the kitchen when I accidentally elbowed the top to the food processor and it flew across the room.  I am not terribly coordinated.  Anyway, when I want sushi, I usually go out for sushi.  I love going out for sushi. But, I have to admit I get a hankering for it pretty frequently.  And the nearest sushi restaurant is like 30-40 minutes away.  (I live kind of live in the middle of nowhere &#8211; which I love most of the time.  Except when I really want sushi in my mouth).  So, here is my quick fix sushi.  It&#8217;s like the easiest thing to make, and it really is tasty.  All the flavors of a California roll, tossed into a bowl.  Happy stuff. 		<description><![CDATA[Yesterday was a good day for me. Though it wasn&#8217;t taco Tuesday with a movie, I did have tacos and see a movie.  Which were delicious and amazing respectively. I spent the afternoon not doing work, and instead planning our next trip to Disney, which makes me giddy with excitement. I also got to crack open a fresh box of paper clips.  Sometimes it&#8217;s the little things in life. The movie we saw yesterday was Star Trek, and it was totally amazing.  I love Simon Pegg a lot. Speaking of things I love a lot (and bad segways, wait were we talking about segways?), Mexican food tops that list.  This was a really easy dinner that was also super tasty.  The fixings are flexible, so you can use anything you have laying around.  I have been getting a bunch of lettuce in my veggie share, and this was a really good way to get rid of it use it. 		<description><![CDATA[One of my favorite parts of summer is veggie burgers.  I know its summer when I feel tempted to either grill everything, or eat everything raw.  (I tend to go on raw food kicks in the nice weather, it&#8217;s a wonderful time because dinner is chop chop and done) I have been trying to perfect the veggie burger for a while.  It is way trickier then I ever imagined.  The balance between dry and wet ingredients is the hardest part, since I don&#8217;t love the idea of using bread crumbs.  Because usually the burgers are served on bread and that makes me feel like I am eating a lot of bread for one sitting.  And I always try to cram the most possible amount of veggies which are generally lots of water. These are things that keep me up at night. A while back we bought some amaranth, which I was excited to try out. For those of you who are not familiar with amaranth, it is an &#8220;ancient grain&#8221; that it very small and round.  It looks like a tiny quinoa.  And, actually, I was quite surprised by how similar the texture was to quinoa when it was cooked. 		<description><![CDATA[I hope you all had a wonderful weekend, and that you Mothers had an amazing Mother&#8217;s Day!! The weather yesterday was gorgeous, but boy are allergies kicking in for everyone this year.  Almost everyone I know is showing symptoms of seasonal allergies.  I think vitamin C is miraculous stuff, and recently I also learned vitamin C can act as an antihistamine, which means it might help with those allergies!!  You know for this crazy girl the next step was food with vitamin C. Mmmm fruit salad!! Vitamin C is really unstable with any heat, so fresh, raw fruits and veggies are the best way to get your whole food dose of C.  I am totally obsessed with fruit salad lately, but there still isn&#8217;t much local fruit in season, so citrus and tropical fruits have been where I have turned.  I even had fruit salad for lunch twice last week because I was craving fruit so much! 		<description><![CDATA[After an awesome response on Facebook about doing a pantry post (you rock btw) I raided my pantry to see what I thought I couldn&#8217;t live without.  I tried to keep it to staples for fast &#38; easy cooking, and for someone starting out on a vegetarian/vegan/healthy food lifestyle.  What I know for sure is that you are a super smart and educated bunch.  So you may already know the things I go off on tangents about.  I am really good at tangents. 		<description><![CDATA[This is one of my favorite lazy day dinners.  I always keep jars of tomato sauce in the pantry, and kale in the freezer.  So I can whip this up almost any day, even if I haven&#8217;t been to the food store in a while.  And it&#8217;s ready in no time.  If I have mozzarella, I chuck some in there, if not it is nbd because it&#8217;s still delicious!! I call for arugula here, because I had some on hand that needed to be used, but you can sub out for almost any leafy green: kale, spinach, swiss chard.. Yay for flexibility!! Lately we have been doing quinoa bowls a lot for dinner, where I make a bunch of plain quinoa and hubby and I mix in whatever we feel like eating.  That way we can each have what we want, which for me is usually this, and for hubby it is usually buffalo style. 		<description><![CDATA[Taco Tuesday is one of my favorite things.  First of all, what is better then knowing what you are eating for dinner without having to go through the whole &#8220;what do you feel like&#8221; routine?  And also, tacos are delicious. I was psyched about these because they ended up looking really pretty, and tasted even better.  It&#8217;s fun when things work out like that. 		<description><![CDATA[Gluten free baking can be really tricky.  It&#8217;s tough to get the right texture, and not use a ton of weird ingredients.  When I took the first bite of this one, I was doing a happy dance. This week has been a little tough, and nothing quite says comfort like banana bread.  Something about it is like a hug, and it is wonderful.  Even just the smell coming from the oven is comfort. I started with a recipe I have been using for years, and then started tweaking.  This one has a lot less sugar than the original.  I think the original recipe used a cup of white sugar.  That seemed like a crazy amount.  Especially since I can really house this bread (note to self: don&#8217;t make this too regularly, too yummy for my own good).  I am a wee bit obsessed with Grade B maple, which is lovely in here because it adds a warm, caramel like flavor, but it&#8217;s a bit harder to find so if you can&#8217;t find it Grade A works perfectly. 		<description><![CDATA[With the weather firmly standing in Spring territory lately (we hit 70 this weekend!), things are starting to bloom and green.  If you have done or are doing a CSA, you may be getting a ton of greens at this time.  Or you may have that in store for you in the coming weeks. After the first couple of weeks of my first CSA, my salad spinner and I became BFFs.  We are going to be tight again in the coming weeks. I have been doing a small CSA type box recently that has been featuring lots of kale and swiss chard.  I have been totally loving it.  Both because the greens are healthy and delicious, and because I really love when I am given the food to create with since it takes a lot of the decisions out of the equation for me.  I am not a terribly decisive person.  I was a huge fan of my Magic 8-Ball as a child.  Though it never seemed very decisive either, I swear I got &#8220;Ask again later&#8221; more frequently than should have been statistically possible.
