Gluten Free Blueberry Pancakes 3

I thought I would end this week with another something sweet.  I hope no one is upset that all this week’s recipes were sweet stuffs.

I tried to do the whole maple pour photo (I know it has been done a lot, but its so pretty!!) And here’s what I got:

Close.  No cigar.  No hard feelings.  They still came out pretty.

I made these Sunday morning.  I got a container of blueberries on a whim the day before, and they were soooo perfect.  Sweet and they popped when you bit them.  Seriously my favorite.  So I wanted to make something with them.  What I ended up doing was pureeing some blueberries I had in the freezer with some water, and using that in place of milk (I used my cinnamon roll pancake recipe as the starting point).  They turned out so pretty, and sooo tasty too.  And, since I put blueberries in the batter and plopped them into the pancakes they were double blueberry deliciousness!!

Health highlight of blueberries:  Blueberries are undeniably a superfood.  They have been shown to prevent cancer, help your brain, prevent urinary tract infections, protect your heart, and even help your eyes!! All thanks to the antioxidants and phytonutrients in the lovely little gems.  A lot of the nutrient power is found in the skins of blueberries, which is why some suggest opting for wild blueberries when possible because they are smaller in size which means more skin.  But any old blueberries are going to pack a health wallop, and I think trying to get a dose in daily is super for your health!!

Gluten Free Blueberry Pancakes

Serves: 4
Double blueberry pancake goodness, in no time at all. A bonus is that they are dairy free, gluten free, and nut free!!
  • 1 cup Blueberries
  • 1½ cups Water
  • 1 cups Oat Flour (gluten free)
  • 1 tablespoon Baking Powder
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Blueberries (to sprinkle into the pancakes)
  1. In a blender, add the first cup of blueberries and water
  2. Blend until smooth
  3. Add the oat flour, baking powder, egg and vanilla
  4. Blend until combined
  5. Sprinkle each pancake with blueberries after you pour them onto the pan
  6. Cook as you normally would with pancakes (I use a griddle set to 350)


On a side note, it was kind of a rough week for me with the site.  I moved hosting companies a few weeks ago and have been having issues ever since.  Since I am now officially off their server I am happy to share the company name if anyone wants to know who to avoid.  In moving to my new host (who I am super happy with so far) I was down for almost 2 full days.  I felt really bad about it, and was worried about how it was going to affect you guys.  I want you all to know I am a real person behind this blog, I read every comment and see every like and appreciate it all.  I am so, so grateful to those of you who stuck it out with me, I seriously can’t thank you enough.  You guys are the reason I do this on top of my full time job, and I really really appreciate every time you come to the site, hit like, or say hello on comments.  Really.  Every one of you.
