It’s tomato time!! Seriously, heirloom tomatoes are the best things that ever happened.

Strangely, I used to not like raw tomatoes.  I think it’s because the seed part was too squishy for me.  But one bite of a ripe, flavorful tomato and all that sillyness was forgotten because yum!!

And heirlooms are so dependably delicious and flavorful.  Produce is August is the best.

You might be thinking “has she gone the way of Paula Dean and put this sandwich on chocolate chip pancakes?”  These do look an awful lot like chocolate chip pancakes, but they are chocolate chip pancake’s evil genius twin: the kalamata olive gluten free flatbread.  Because while I really love chocolate with almost anything, on a tomato sandwich might be too weird.  Even for me.

I actually really love making bread.  There was a time when I did it every weekend, because I found my zen in the kneading and rising and then kneading again of the dough.  But now I find my zen in making flatbreads in 5 minutes and then laying in the sun to read whatever book I am obsessed with at the time.  Am I maturing backwards?

Health highlight of chickpeas: Chickpeas are high in antioxidants, and are also an excellent source of manganese, which combined do all sorts of good stuff for you including reducing your risk for heart disease, and protecting your nervous system! They are high in B Vitamins, which also do a range of good stuff in your body, including preventing Alzheimer’s, and promoting new cells (meaning keeping you looking and feeling young!!).  They are also a great source of fiber, which can help regulate your blood sugar, and help you feel fuller faster and longer.

Gluten Free Flatbread Sandwich

Serves: 2
  • 1 cup Chickpea Flour (I like this one that is blended with fava flour)
  • 1½ cups Water (cool)
  • 2 tablespoons Flaxseed Meal (ground flax seeds)
  • ½ cup Kalamata Olives (measured then chopped)
  • ½ teaspoon Dried Basil
  • 2 Tomatoes
  • ¼ cup Fresh Basil
  • 4 teaspoons Balsamic Vinegar
  • Salt and Pepper (to taste)
  1. In a medium bowl whisk together all the flatbread ingredients
  2. On a griddle or in a pan add ¼ cup of the flatbread batter, and cook like you would with a pancake (you may have to spread it out a little depending on how thick your batter is)
  3. You should get about 8¼ cup flatbreads
  4. Cook until golden on both sides
  5. When done layer with the tomatoes and basil
  6. Drizzle with 1 teaspoon of balsamic and season with salt and pepper
  7. Enjoy your yummy flatbread sammie!!
