You know what I could eat every day? Mexican food. I freaking love the stuff. So I had to find a way to incorporate it into the cleanse. Like, it wasn’t optional.
It’s fun too because I have been noticing a lot of people around me discovering intolerances to grains. So this is a perfect fit. It also cooks up in no time. Which is my problem with grains a lot of the time, and part of why I have a deep love for quinoa. Did I just say I have a deep love for quinoa? Even I can admit that’s just weird. No less true though.
Rice can take like 40-50 minutes to cook sometimes, and on a day where I have no patience and want to sit and veg out that’s entirely too long. My solution: cauliflower rice!! Plus, you also get and extra dose of healthy veggies!!
I would be lying if I told you this wouldn’t be amazing with some cheese. I went with nutritional yeast, since I am off cheese right now, which ended up being really tasty too. But if you eat cheese you should go for it as a condiment.
Health highlights of cauliflower: cauliflower is anti-inflammatory which means it can help reduce the risk of heart disease, Alzheimer’s, even depression (which is still being researched further to explore the inflammation-depression link). As a part of the cruciferous family (with broccoli) cauliflower contains potent anti-cancer compounds. It also supports the body’s detoxification process.
- 1 head Cauliflower chopped
- 2 tablespoons Cilantro chopped
- Zest of 1 Lime
- 2 cans Pinto Beans
- ¼ teaspoon Garlic Powder
- ¼ teaspoon Chipotle Chili Powder (regular chili powd will work too!)
- ¼ teaspoon Cumin
- In a food processor fitted with the blade, add the cauliflower
- Pulse until it is the texture of rice
- In a microwave safe bowl add the cauliflower
- Microwave for 5 minutes
- Add the cilantro and lime and stir well
- Season with salt and pepper
- In a medium pan add the beans and spices
- Season with salt and pepper
- Heat through
- Layer the cauliflower rice, beans, and fixings
- Dive in, face first!!
