Green Orange Juice 2

I have been getting the most beautiful citrus fruit lately.  And sometimes I love cutting it up and eating it like a salad (grapefruit segments with maple syrup and walnuts is pretty much the best thing that ever happened to grapefruit for breakfast).  And other times I am less motivated and I just want yummy citrus without the effort, so we have been making some lovely juices.

And the other day I had the idea to throw some spinach into the blender with the orange juice, to get an extra serving of veggies into my breakfast (yes, I am really that into veggies).  And you know what’s amazing about it?  You can’t taste the spinach at all, even a little bit, so I had to share.

If you have kids and want to get an extra serving of greens, I think you will adore this recipe.  I also love it for days where the only meal I am home to eat is breakfast, and I want to pack in as much healthy stuff as I can.

And seriously, what better day to share a “green” orange juice then St Patrick’s day?  Though it doesn’t look super green, because I used a combo of blood orange and regular orange juice, we are just going to pretend like it’s green.  It’s green on the inside, so I think that counts.

Healthy highlight of spinach: You may have heard of beta-carotene, the vitamin that gives carrots their orange color. Well, it might surprise you that spinach is an excellent source of this vitamin! You can’t see the orange color because the green from the chlorophyll covers it. Interesting, right!? The beta-carotene is great for your eyes and your skin. Spinach is also high in iron and a great source of protein (per calorie it has more protein than red meat!).  It has been shown to prevent cardiovascular disease, and cancer. In fact, in a study of different vegetables and their affect on prostate cancer, spinach showed significant protection against aggressive prostate cancer. Spinach also reduces inflammation, and recent studies have linked inflammation to depression.  So eat your spinach and smile!! :)

Ingredients
  • 3 cups Orange Juice (fresh squeezed or purchased, your choice)
  • 2 cups baby Spinach
Instructions
  1. Place the orange juice and spinach in the blender
  2. Blend until smooth
  3. Pour and enjoy!!
