I have been on a mission lately: to find a tortilla (wrap) that is not full of unpronounceable, and unhealthy stuffs.  I have found it to be a very, very difficult mission. My local health food store, which I thought I could definitely depend on to provide at least 1 option.. is closing!! I was so bummed.  I even nearly broke down and ordered some online, until I got to checkout and found shipping was $50!!!  So, while I am still trying to find some good ones, I found some that at least didn’t contain hydrogenated oil, and I settled.. I am going to need to take a trip to another health food store one of these days to see if I can find some good sprouted ones (which was what I got close to buying online).  If you don’t live out in the sticks like I do, try to find some good ones, and let me know if you find ones you like!!

This particular dinner was a hubby favorite.  It was really quick, and super yummy.  I always used to remove the rib/fin things on the inside of the mushroom cap, but I got lazy and started leaving them in and honestly don’t notice a difference.  So feel free to leave them in and save some time!!
I served these wraps with simple grilled corn, but you could do a salad or any other side you like too!

Health highlight of avocado:  though avocados are higher in fat, it monounsaturated, and people who have higher consumption of these kinds of fats tend to have a lower risk for heart disease and also tend to be slimmer!  Avocados are anti-inflammatory and contain lots of healthy antioxidants.  They are a good source of carotenoids, and because of the fat content, these nutrients are optimized for absorption!!

Dressing:

1 Lime (juiced) (roughly ¼ cup)
2 tablespoons EV Olive Oil
½ teaspoon Hot Sauce (I used chalula)
¼ teaspoon Garlic Powder
Salt and Pepper (to taste)

 

Grilled Mushrooms:

4 Portabella Mushroom caps (medium sized, if they are large just 2)
2 tablespoons Canola Oil

 

Wrap fixings:

Arugula (roughly 1 cup)
Avocado
2 Wraps (try to find sprouted ones if you can, the ingredients tend to be less crazy)

 

Easy Instructions:

  • Oil and grill the mushrooms
  • Mix up the dressing ingredients
  • Mash the avocado with 2 tablespoons of the dressing
  • When the mushrooms come off the grill pour the remaining dressing over them
  • Slice the mushrooms
  • Add the mashed avocado, arugula, and mushrooms to the wrap
  • Roll it up
  • Eat it up!

 

Detailed Instructions:

  • Preheat the grill
  • Drizzle or brush the oil on the mushrooms
  • Place the mushrooms on the grill with the stem side up
  • When you start to see moisture pool in the cap, flip it
  • Grill for another 2 minutes and then take them off the grill
  • Mix up the dressing ingredients in a small bowl, whisk well
  • Mash the avocado with 2 tablespoons of the dressing
  • When the mushrooms come off the grill pour the remaining dressing over them
  • Slice the mushrooms
  • With the wrap on a plate, add half the avocado mixture
  • Add the mushroom, then the arugula
  • Roll it up
  • Eat it up!
