I am a little obsessed with Jamie Oliver.  My obsession started when I was much younger and he was known as the Naked Chef.  He did a show more recently (in the UK, I don’t think it has aired in the US) that was my favorite yet: 30 minute meals.

I watched every episode at least once, and bought the cookbook (from England so all the measurements were in metric) and made almost every recipe in the book.  One of the easy desserts he made was thinning out mascarpone with fruit for dessert.   It quickly became one of my favorites.

So here is my take on it, a lovely and easy dessert.  It might be September, but I am determined to make the most of the warm weather while its here.  The creamy mascarpone is a really good compliment to the acidic pineapple.  If you have never had mascarpone, it tastes a bit like an unsweetened and thicker whipped cream, which is why it works so well in this application.

If you are interested in checking out the Jamie cookbook, it has since come out in the US and is called Meals in Minutes.   I will warn you that it is pretty meat heavy, so if you are a vegetarian it might not be your best bet.

Health highlight of pineapple:  Pineapples contain ferulic acid, which can help reduce skin’s damage from UV ray exposure.  It is anti-inflammatory, can aid in digestion.  Pineapple is also a good source of vitamin C as well as other antioxidants, and manganese, which is necessary for the action of antioxidant defenses.


1 Pineapple (peeled and cored – I buy the one that is already peeled and cored in the refrigerated section of the food store – and sliced into steaks)
2 rounded tablespoons Mascarpone Cheese
1 tablespoon Maple Syrup
1 tablespoon Water


  • Preheat the grill
  • Add the pineapple and grill until you get caramelized grill marks on each side
  • In a small bowl whisk the mascarpone, maple and water really well
  • Serve the grilled pineapple with the cream
  • Enjoy!!
