I have a lot of reasons to love the family I married into.  I got an amazing husband, best friends, role models, and lots of love in my life out of the deal.  Which is pretty unbeatable.

I also got lemon dressing.  And while next to those other things, something as simple as lemon dressing may seem unimportant, let me tell you why it’s not.  To me, it represents the traditions of my new family, and traditions and family are two things that I think are really important.  Almost every family get together or holiday includes lemon dressing.  Everyone’s recipe is a little different, but each is my favorite.

Hubby’s Grandfather was the patriarch of the family, and when he passed away our Aunt adopted olive trees in everyone’s names from the area of Italy where he was from.  The olive trees grew their olives, which were pressed to make olive oil, and that oil was sent to each of us.  The whole thing was really beautiful, and the olive oil (which we got last week) is so fresh and delicious.  So the lemon dressing made with this olive oil was really special for us.  And something I wanted to share with you!!

And you should know that this is simply the most delicious thing you can put on anything and everything.  I keep it in my fridge almost always, because it will turn salad, pasta, quinoa, avocado, grilled veggies, almost anything into a delicious dish.  Mine is a little heavy on the lemon and the salt, so feel free to add a little more oil and less salt depending on how you like yours.  But smiling while eating it is non negotiable ;)

Health highlight of EV Olive Oil:  Extra virgin olive oil is anti-inflammatory.  You hear all the time that it is a “heart healthy fat” so it’s not a surprise that EV olive oil is good for your heart.  This oil is also a good source of vitamin E, which is a powerful antioxidant that helps protect your cell membranes from damage (and has been shown to help cells repair from sun damage!).  Extra virgin olive oil may also help lower blood pressure, and reduce your risk for breast and colon cancer.

Lemon Dressing

Serves: 4
  • ¾ cup Lemon Juice (about 5 lemons)
  • 1 clove Garlic
  • ¼ cup EV Olive Oil
  • ½ teaspoon Sea Salt (this makes a salty dressing, adjust to your liking)
  1. In a small bowl add the lemon juice
  2. With a garlic press press the garlic into the lemon juice (if you don’t have a press, just mince the garlic and add it to the lemon juice)
  3. Add the olive oil and sea salt
  4. Use a hand blender to blend until smooth and combined
  5. Use right away, or store in the refrigerator for up to 5 days (you may need to bring to room temperature before you can use it, as EV olive oil will get firm like butter in the refrigerator)
