Garlic Chili Pasta with Green Beans 2

This winter has certainly been a snowy one.  My driveway is resembling an ice fortress straight off the set of Frozen.  Clearly the marketing department at Disney has been hard at work making it an icy, snowy winter to promote the movie.  I did see it twice, so I guess it’s working!!  (Oops, my Disney nerdom is showing!!)

Despite the cold and snow Hubby and I have been trying to make an effort to go out and have dates.  And I feel like every time we go out I come home wanting to recreate things I had at restaurants. (The grapefruit salad and kale salad were totally restaurant inspired too!)  Recently we ordered a side dish of green beans to split, and they were smothered in the most delicious honey/soy/cilantro sauce.  I couldn’t stop eating them, and since I am still getting really good green beans.  And pasta is the perfect cold weather food, so this dish happened.  It’s just as delicious as at the restaurant, and super fast to make, so I count it as a win.

And you know what is super wonderfully amazing!?  Spring is exactly one month from today.  Hooray!!!!!!  That means I can start breaking out the shorts right!? (Just kidding, I am totally the girl who wears sweaters in the summer, I was cold just making that joke!)

Health highlight of green beans:  Green beans are very high in antioxidants, including carotenoids, which have been linked to healthy glowing skin.  The antioxidants also support a healthy heart, helping to protect against cardiovascular disease.  Green beans contain minerals that are important for bone health.  They are anti-inflammatory, very low in calories, and are a good source of protein!  They even contain a small amount of omega-3 fatty acids!!

Pasta with Green Beans and Chili Garlic Sauce

Serves: 2-4
  • 8 oz Pasta (1/2 lb) – Any shape you fancy
  • 1 tablespoon EV Olive Oil
  • 8 oz Mushrooms (I used oyster, any kind would be perfect)
  • 4 cloves Garlic
  • 1 lb Green Beans (trimmed and cut into bite sized lengths)
  • 1 teaspoon Honey
  • 3 tablespoons Soy Sauce
  • ¼ cup Vegetable Broth
  • ¼ teaspoon Sriracha (or red pepper flakes) – to taste, adjust up for more heat or omit if you are not huge on spice
  1. In a medium pot boil the pasta in water (according to the package)
  2. In a large saute pan add the oil and the mushrooms, cook until the mushrooms begin to brown, about 5-8 minutes
  3. Add the garlic and cook until it just starts to get golden
  4. Add the green beans, honey, soy sauce, vegetable broth, and sriracha
  5. Stir well and let cook until the green beans soften a little (should be another 5 minutes or less)
  6. Once the pasta is done, drain it and add it into the pan with the veggies and sauce
  7. Toss to combine
  8. Taste for seasoning, add salt and/or soy sauce if needed
  9. Don’t forget to add a pinch of love and enjoy!! ;)
