Summer brain is a real thing that I totally just made up. It refers to the desire to not have to think too much (that pile of work on my desk can wait until Fall, right?), and be able to pretend you are on vacation while the weather is so incredibly nice.

On our honeymoon, we did nothing but lay on the beach and by the pool and drink Pina Colada’s and mudslides.  Well, we also ate food.  But mostly it was drinking and lounging.

It was pretty much the most relaxing vacation I have ever been on, because we had nothing to think about or worry about or do, we literally just relaxed.  It was amazing.  Now, any time I have a mudslide or anything that is flavored like a pina colada I am transported back to that time of super relaxation.  And really, isn’t that what summer should be all about?

So I am going to kick back eat this sorbet and read some books this weekend.  Best weekend plans I have ever made.

Health highlight of pineapple:  Pineapples contain ferulic acid, which can help reduce skin’s damage from UV ray exposure.  It is anti-inflammatory, can aid in digestion.  Pineapple is also a good source of vitamin C as well as other antioxidants, and manganese, which is necessary for the action of antioxidant defenses.

Pina Colada Sorbet

Serves: 4
  • 1 Pineapple, cored and frozen (about 20 oz)
  • ¼ cup Coconut Milk
  • ¼-1/2 cup water
  • Maple (optional, to taste – depends on how sweet your pineapple is)
  1. In a food processor add the pineapple and coconut milk
  2. Turn the food processor on and let it run, chopping up the pineapple well
  3. When it gets to be the texture of shaved ice, add the water, a little at a time until it comes together like the texture of sorbet
  4. Taste, add maple if needed (I added 1 tablespoon) mix in
  5. Serve up and enjoy!!!!!!
