You can’t go wrong with potatoes and cheese.  I love soup in the cooler weather and this is so easy and so fantastic.  It also freezes super well, so you can make a big batch and freeze it.

When I made a batch of Healthy Mashed Potatoes, I used half for this soup and half for my Shepherd’s pie.  It worked out really well, in a short time I had dinner, and lunches for almost a full week done.  Can’t beat that!!!

I read a study recently that fed some subjects food, then the other subjects got the same food but pureed into a soup (same calories, same serving size).  Those who ate the soup reported feeling fuller and staying fuller longer than those who ate the solid food.  That kind of surprised me, but it makes me want to keep eating soup!!!

Health highlights of cauliflower: cauliflower is anti-inflammatory which means it can help reduce the risk of heart disease, Alzheimer’s, even depression (which is still being researched further to explore the inflammation-depression link).  As a part of the cruciferous family (with broccoli) cauliflower contains potent anti-cancer compounds.  It also supports the body’s detoxification process.

  1. In a medium pot stir the cheese and vegetable broth into the potatoes
  2. Bring to a simmer and remove from heat
  3. Serve up and enjoy!!!!
