So, if you have been reading this blog a little while, you may know I am obsessed with Harry Potter. So, with that knowledge, this recipe might not come as a surprise. I think it would be perfect for a Halloween party (virgin or spiked with some rum!).
I have actually wanted to make pumpkin juice for a long time. When hubby and I visited the Wizarding World of Harry Potter in Orlando a couple years ago, you better believe I had butterbeer and pumpkin juice. The verdict was that butterbeer is amazing, and pumpkin juice is kind of weird, and not my favorite. And this from the girl who is obsessed with everything pumpkin.
I started by getting some sugar pumpkins and juicing them. Trust me, don’t try this. It was super weird. I had a backup plan, though: butternut squash. This was muuuuuch better, but still had kind of a weird flavor. So I juiced it then boiled it to bring out the sweetness and cook the weird starch flavor. I added a pinch of pumpkin pie spice, and voila!!! It tastes exactly like I always imagined pumpkin juice would taste!!!
I can sip it and close my eyes and pretend I am at Hogwarts… Life is good.
Health highlight of butternut squash: Butternut squash is a rich source vitamin A (in the form of carotenoids) which is heart healthy, good for your vision, and good for your skin! Butternut squash is also an excellent source of vitamin C and other potent antioxidants. It is anti-inflammatory, high in fiber, potassium, and vitamin B6, and folate. These nutrients can help stabilize blood sugar, support your nervous system, and promote bone health.
1 Butternut Squash
1 pinch Pumpkin Pie Spice
- Remove the seeds and squishy stuff from inside the butternut squash
- Leave the peel on and cut the butternut squash into pieces that will fit into your juicer
- Juice the apples and butternut squash
- Bring the juice, and pumpkin pie spice to a boil
- Remove from heat and allow to cool (you can add ice to speed up the process)
- Serve and enjoy!!!!!
