Raw Fennel and Grapefruit Salad 1 (1)

I am loving playing with the balancing flavor and texture in food recently.  I listen to this wonderful podcast, and they were discussing how food science develops food that is addictive and hits all the flavors and sensations that we crave.  The thing that I really love about the podcast is that they weren’t talking about how bad it is that food technology does this, but about how we can do it ourselves with healthy food!  I just love looking at the positive side of things!!

So this salad has that balance going on.  It has crunch from the fennel, the grapefruit provides the sour and bitter, the honey is sweet, salt add balance, and the avocado adds a wonderful soft and richness to the dish.  Perfection, and makes this salad something that you want to eat, and is really good for you.

Health highlight of Fennel:  Fennel has a long history in some European countries, and was even used for medicinal purposes.  It contains powerful antioxidants that reduce inflammation, and could even prevent cancer.  Fennel is an excellent source of vitamin C, as well as fiber, folate and potassium.  Due to this blend of nutrients fennel is great for immune function, digestion, and heart and brain health!!

Raw Fennel Salad with Grapefruit (vegan)

Serves: 4
A crisp salad that will bring some sunshine to your winter
  • 3 small bulbs Fennel
  • 1 medium Shallot
  • 2 Grapefruits (peeled then sliced)
  • 1 Jalapeno (remove seeds and ribs and slice thin)
  • 2 tablespoons Basil (chopped roughly)
  • ½ Grapefruit (juiced)
  • 1 tsp raw Honey (if you don’t eat honey, sub for maple syrup)
  • 2 tablespoons EV Olive Oil
  • 1 Avocado (diced)
  • Salt
  1. In a food processor or carefully with a knife slice the fennel and shallot thin
  2. In a medium bowl add the sliced fennel, sliced shallot, sliced grapefruit, sliced jalapeno, basil, grapefruit juice, honey and olive oil
  3. Toss well to coat
  4. Add the avocado and toss again carefully
  5. Salt to taste
  6. Serve!
