This salad is awesome if you have had a spurt of less than stellar eating and are looking to jump-start yourself back into feeling good.  It also makes a great lunch because you can make it in advance and the texture will stay good for several days.

Salad Ingredients:
3 Carrots shredded
1 head Napa Cabbage sliced thin
1 bunch Kale sliced thin
2 small Shallots sliced thin

Dressing Ingredients:
1 Avocado
¼ cup Raw Nuts (cashews, peanuts, or anything you like)
¼ cup Water
Juice 2 Limes
1 Hot Pepper (serrano or jalapeno work well – remove seeds and ribs if you don’t like too much heat)
1 small handful Cilantro (about ¼ cup, not packed)
1 clove Garlic

Easy Instructions:

  • Add all the salad ingredients to a large bowl
  • Throw all dressing ingredients into the blender, blend until smooth
  • Combine the dressing and salad, mix well
  • Taste for seasoning, add salt as desired
  • Munch!! Enjoy!!
