I have vacation fever.  Even though I am working today and tomorrow, I took Friday off and have been treating this week as a vacation week in my brain.  Well, staycation week to be exact.

Last night we did super easy veggie burgers for dinner, I made these pops, and we watched Pitch Perfect.  This is shaping up to be the best staycation ever!!

I loved the movie so much that after we watched it, I turned on the soundtrack and blasted it while doing the dishes.  This may not seem terribly out of the ordinary, but I never ever do the dishes during staycation.  Because.. Vacation Mode!!  You know, the mode where you just want to relax and pretend like those dishes aren’t piling up?  It’s pretty wonderful, but it’s going to be even better tomorrow when all the dishes are clean!!  And I didn’t even mind doing the dishes because I was dancing around and singing while doing them.  I am really glad our neighbors aren’t close enough to hear my singing.

I even loved the movie so much that I bought it on dvd so I can watch it obsessively and force my friends to watch it with me.

I bought these popsicle molds a while back, and have been plotting my first use of them for what feels like forever.  I can’t believe it took me so long to use them, because it could be easier!!  It’s going to be perfect for this week since it’s pretty hot out, these are delicious and festive for the 4th of July, and I can remake them if I need to since they are so easy to whip up!!  I use frozen fruit in here because it tends to make the pops less rock like when you eat them.  Less like a fruit ice cube and more like a popsicle.  Hooray for summer!!

Health highlight of blueberries:  Blueberries are undeniably a superfood.  They have been shown to prevent cancer, help your brain, prevent urinary tract infections, protect your heart, and even help your eyes!! All thanks to the antioxidants and phytonutrients in the lovely little gems.  A lot of the nutrient power is found in the skins of blueberries, which is why some suggest opting for wild blueberries when possible because they are smaller in size which means more skin.  But any old blueberries are going to pack a health wallop, and I think trying to get a dose in daily is super for your health!!

Red White and Blue Popsicles (no sugar added!)

Serves: 6
  • 1 cup Frozen Strawberries
  • ¼-1/2 cup Water
  • 2 cups White Peaches or White Nectarines
  • 1 cup Frozen Blueberries
  • ¼-1/2 cup Water
  1. In a blender blend the strawberries and water (should be the consistency of a smoothie, add more or less water as needed)
  2. Divide the strawberry puree between the 6 pop molds
  3. Rinse the blender, and blend the peaches (I used fresh, ripe peaches, so they didn’t need any water, but feel free to add a little if you need to get things going)
  4. Divide the peach puree between the 6 pop molds
  5. Rinse the blender, and blend the blueberries and water
  6. Divide evenly between the 6 molds, if you are using the same as I used (these) fill it all the way to the top
  7. Add the bottom of the molds, and pop into the freezer for at least 4 hours, or until solid
  8. To unmold run under warm water then slide out of the mold
  9. Store your pops in a zip top bag for as long as they will last!! ;)
If you want to add some additional flavor or richness, feel free to sub the water for non dairy milk or fruit juice
