Oh hello!! It feels like it’s been a while since we chatted. I didn’t prattle on as much as usual during my Thanksgiving series over the last couple of weeks. So I am pretty excited to begin spilling by guts again. I know that’s why you come visit me here, not for the recipes. Right? (It’s ok, you don’t have to answer. It’s actually totally cool with me if you just want recipes. I love food too.)
It’s feeling like we are definitely nearing winter, and we have even had a couple of flurries already in the northeast! For me this means 2 things. First that I begin to appear much fluffier, as I don’t think wearing 4 layers of clothing is excessive. Even if 3 of them are sweaters that are meant to be worn on their own. And second that I want everything I eat or drink to be hot. Celestial Seasoning teas are the best thing to ever happen. (Sugar Cookie Sleigh Ride and Candy Cane Lane are my faves so far)
So it’s that time of year when I kind of live off soups. They fill my belly and warm me from the inside. I can’t help but be obsessed with them.
Health highlight of tomatoes: Tomatoes are also full of antioxidants that have been shown to prevent certain types of cancer (specifically lung and prostate) promote heart health, and may be helpful in supporting bone health. One of these antioxidants is lycopene, which has been linked to higher functionality with age, as well as increases your skins natural SPF!
- 10 Roma Tomatoes
- 1 teaspoon Sea Salt (adjust to your taste)
- 1 cup Vegetable Broth
- 1 tablespoon Sherry Vinegar
- ¼ teaspoon Garlic Powder
- ¼ teaspoon Onion Powder
- 2 tablespoons Fresh Basil
- 1 (15 oz) can White Beans (drained and rinsed)
- Roast the tomatoes (for my how to, check out this post)
- Add the tomatoes, sea salt, veggie broth, vinegar, garlic and onion powder, and basil to a blender
- Blend until smooth
- Stir in the white beans and enjoy!!
