October is breast cancer awareness month, so this pink smoothie is my way of honoring the campaign.

Food can play an important role in prevention of cancers, but the purpose of breast cancer awareness month is remind women to get screened regularly.  So I wanted to share the message, because I love all of you guys!!

Beets are in season, and I still had some strawberries kicking around in the freezer from the summer.  When you want to turn something pink, beets are the way to go.  I was able to find beets cooked in a vacuum-sealed package in the produce section in my grocery store, which was incredibly convenient. I hope you guys can find them too, just make sure to go for the plain ones, and not the ones marinated in vinegar.

Health highlights of beets: aside from being oh so pretty, beets are also super rich in healthy nutrients.  They are packed with fiber and antioxidants such as carotenoids that help protect your eyes as you age.  They are anti-inflammatory and their combo of nutrients has been shown to reduce risk of cancer risk.  They also contain nutrients that support a healthy heart.

Strawberry Beet Smoothie
Serves: 2
 
Ingredients
  • 2 small Beets (cooked and peeled, roughly 4 ounces)
  • 1 ½ cup Strawberries
  • 2 medjool Dates (pitted)
  • 1 cup Almond Milk
  • 1 cup Ice
Instructions
  1. Place all the ingredients into a blender
  2. Blend until smooth
