Vegan Strawberry Rhubarb Compote 3

I see rhubarb as nature’s sour patch kids. Because it has that natural tartness that is so fun and puckery.  I was going to ask if puckery is a word, but that little red line is already screaming at me that it is not.  I am just going to ignore it though!

Pare the sour rhubarb with some delicious and sweet strawberries and its like nothing else.  While it is traditional in pies, that is totally not the only way to enjoy it.  And I really wanted to eat it.  This is the motivating factor behind most of my recipes.

After I made this, I made a batch of gluten free waffles to test it out with, and it was awesome.  I thought I might want a small drizzle of syrup as well, but I totally didn’t need it.  I literally just slathered the waffles and went to town.

This is also awesome as a jam, the texture is thicker like a jam so it is a perfect substitute.  It would also be good mixed into some yogurt, or on top of some ice cream!!

I have been really digging coconut sugar lately.  It is a bit pricey, which is less ideal, but has some perks.  I will preface my list of the good things about coconut sugar by saying that I still like to keep any kind of sugar consumption in check, even the natural and unrefined sugars.  Coconut sugar is unrefined, and very low glycemic, so it has less of a spiking effect on your blood sugar.  This is good because it keeps you from having that rush of energy then crash later.  It also retains it’s natural micronutrients like potassium, zinc, and even iron.  I also really like the flavor.  If you don’t have coconut sugar you can sub in any sweetener you like (maple, honey, and dates would all work well in here)

Health highlight of strawberries: Strawberries are powerhouses for nutrition.  They contain high levels of antioxidants, contain more vitamin c than oranges, and a variety of phytonutrients.  Strawberries are a good source of potassium, which helps to aid in keeping blood pressure at healthy levels.  They have even been shown to help regulate blood sugar.  Strawberries are also anti-inflammatory, and could help keep your brain healthy and even prevent cancer!!

Strawberry Rhubarb Compote (Vegan)

Serves: 6
 
Ingredients
  • 3 stalks Rhubarb (sliced)
  • 3 cups Strawberries (remove tops)
  • 2 teaspoons Lemon Juice
  • 3 tablespoons Coconut Sugar
Instructions
  1. In a medium pot add all the ingredients
  2. Bring to a boil and lower to a simmer
  3. Cook about an hour, stirring occasionally, and mashing the fruit around to break it down
  4. Let it cool and stash in the fridge until you are ready to use (it will be good for about a week)
