Thanksgiving Leftover Pasta 1

A lot of people make a sandwich out of their thanksgiving leftovers.  I make a pasta.  I blame it on my Italian roots, which make me obsessed with anything involving pasta.  This one uses the gravy and cranberry as the sauce, and since you don’t have to fit it between bread, almost anything goes!! This year it was tempeh, green beans, gravy, and cranberry sauce.  I have an approximate recipe below so you can have Thanksgiving any day of the year, but it’s all about using leftovers from the big day if you have them!!

Tips and tricks used in this recipe:

  • I used the same pot for everything, so you can only have one to clean, but if you want to speed things along a little you can cook the tempeh in a seperate pan while the pasta and green beans are cooking
  • I like my tempeh really crispy, I think it tastes best that way for most recipes
  • Feel free to adjust the cranberry sauce up or down depending on how much you like
  • You can throw other thanksgiving leftovers in here if you like, sweet potatoes would be super yummy!!

 

Thanksgiving Leftover Pasta

Serves: 2-4
 
Ingredients
  • ½ lb pasta (8 oz)
  • ½ lb Green Beans (trimmed and halved)
  • 1 tablespoon EV Olive Oil
  • 4 oz Tempeh (1/2 package) cubed
  • ½ teaspoon Poultry Seasoning
  • 1 recipe Mushroom Gravy
  • ¼ cup Cranberry Sauce
Instructions
  1. Bring a large pot of water to boil
  2. Add the pasta, set a timer for 4 minutes less than the package instructs for al dente
  3. When the timer goes off add the green beans
  4. Cook for an additional 4 minutes
  5. Drain the green beans and pasta, set aside
  6. In the empty pot add the oil, tempeh and poultry seasoning, cook until the tempeh gets golden and crispy
  7. Return the pasta and green beans to the pot
  8. Add the gravy and heat through
  9. Stir in the cranberry sauce last, I like to just stir it a couple times so there are streaks of cranberry throughout
  10. Dish up and enjoy!!
