Vegan Balsamic Pasta Salad 1

The long weekend is almost here.  I am so excited!! Here are the things I am looking forward to over the July 4th weekend:

  • Lots of yoga.  I try to work out every morning, but I don’t usually have more then 30 minutes.  I am pretty in love with this yoga DVD, and I can’t wait to have 3 days in a row to do an hour each day of yoga.  Myself a couple of years ago would never believe how excited I am to work out.
  • Sunshine and cold drinks.  Iced hibiscus tea is one of my faves this time of the year.  I think it tastes like melted skittles.  In the best way!!
  • Reading.  So much reading.  I love books a lot.
  • Healthy food (of course!) I can’t wait to eat and create.  I just got some gorgeous produce from the farm today which always gets me super excited!! [In case you missed it here are my top 6 July 4th recipes)
  • Time to spend creepily stalking the baby bunny I discovered this morning lives in our yard.  After it took me more than 30 minutes to make the world’s easiest smoothie, hubby came down to discover I was just standing there with a huge smile on my face watching the tiniest, cutest little bunny hop around our yard.  He totally understood upon sight of said bunny why I was just standing there smiling and watching it.

I just realized that this list could kinda go on forever.  Because there are always a million little things to be happy for and look forward to.  It’s why I love writing down what I am grateful for every night.  No matter how tough of a day I have had, I can always fill up a whole page of things to be grateful for!!  So do something that makes you smile this weekend.  :)

Health highlight of bell peppers: all bell peppers start out green, but the longer they stay on the vine to ripen dictates the color and sweetness, as well as slightly changes the nutrient profile.  Red peppers are a great source of beta carotene, while orange offers high levels of other carotenoids.  All are high in vitamin C, and antioxidants.  I like to get a variety of colors, and have found that most people prefer the flavor of the sweeter (non green) varieties.  Peppers are good for your vision because of the carotenoids, are anti-inflammatory, and help support a healthy immune system.

Vegan Balsamic Pasta Salad

Serves: 2-6
  • 8 oz Pasta (dry) [I like this spelt pasta, choose gluten free if you can’t have gluten]
  • ½ cup Sun Dried Tomatoes (chopped)
  • 2 Bell Peppers (diced)
  • ¼ cup Kalamata Olives (pitted and chopped)
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons EV Olive Oil
  • Salt and Pepper (to taste)
  1. Bring a medium pot of water to boil
  2. Add the pasta and sun dried tomatoes to the boiling water
  3. Cook until the box instructs for al dente
  4. Drain the pasta and sun dried tomatoes
  5. In a large bowl add the pasta, sun dried tomatoes, bell peppers, olives balsamic vinegar, olive oil, and salt and pepper
  6. Toss to combine
  7. Refrigerate until you are ready to serve, or eat right away warm (it’s great either way!)
  8. Enjoy!!
