What says love better than being willing to share your dessert? Nothing, I say!! And love means friends too!! So tomorrow, on National Banana Split Day, celebrate with this super light and healthy, delicious, and easy banana split!!
I am obsessed with nutella. I don’t think I am alone. A few years ago I convinced myself that it was healthy and started eating it on everything. I scooped it into my oatmeal, smeared it on my bread, and just ate it with a spoon when I needed a fix. I was so sad when I finally had to come to terms with the fact that it really was loaded with sugar, and I couldn’t fool myself into thinking it was good for me anymore. So now, I like to combine the flavors of hazelnuts and chocolate when I can because it’s an awesome combo that makes me supremely happy.
I used hazelnuts here in place of the walnuts, which also makes it seem a bit more sophisticated (though if you saw me running around the kitchen making this while listening to my Harry Potter audiobook I am not sure anyone would mistake me for sophisticated).
I made the chocolate shavings by using a veggie peeler on a bar of chocolate. You don’t need much, and it makes for a really pretty topping.
Health highlight of bananas: Bananas are known for being a good source of potassium. Potassium is an important nutrient because it helps lower blood pressure, and is used in the process of muscle contraction and nerve communication. It is also helpful in the balance of pH in the body, and so also can help prevent the loss of calcium. Bananas are a good source of soluble fiber which helps to lower LDL (“bad”) cholesterol and can be helpful in the regulation of blood sugar. Bananas have also been shown, because of the synergy of a few nutrients, to be very helpful in stomach upset.
Ice Cream Ingredients:
2 frozen Bananas
2 tablespoons Cocoa Powder
2 tablespoons chopped Hazelnuts (toasted)
Chocolate shavings (see note above)
1 fresh Banana (halved lengthwise)
6 oz Vanilla flavored Almond Yogurt (as the “whipped cream”)
- Add the frozen bananas and cocoa powder to the bowl of your food processor
- Run until smooth (you may need to scrape down once or twice)
- The consistency should look like soft serve
- Scoop it out into your desired dish
- Place the banana halves on either side of the ice cream
- Top with chopped hazelnuts, and chocolate shavings
- Dollop the yogurt
