Vegan BLT Salad 2

Usually by this time of the summer I am over salads.  Because I tend to eat them a lot.  That is not the case this year.  I don’t know what it is about salads that have me so hooked, but I think I am going to go straight from salad obsession to soup obsession as soon as the calendar hits September.  And I am pretty excited for soup season.

I guess on of the reasons I am so into salads is because I am so busy lately that I don’t have a lot of time to spend cooking.  So throwing a bunch of stuff in a bowl is my jam.  But I would be lying if I said my salad infatuation didn’t extend to when we are out to eat as well.  Because if you have a salad with apples, candied walnuts, and dried cranberries on your menu.. you can bet I am ordering that.

But let’s talk about how good heirloom tomatoes are right now.  YUM!! As soon as I get them home I want to immediately dig in.  I also love how they tend to be so hearty, not a lot of the squishy seedy part.  I could probably just eat a bowl of tomatoes sometimes.

With tomatoes so yummy, I needed to make something classic to highlight them.  You may be hooked on salads with me after you try this one.  The smokey tempeh, the crisp and refreshing lettuce, the juicy sweet tomatoes, and the creamy tart dressing?  Its pretty close to perfection. Health highlight of Romaine Lettuce:  Romaine lettuce was recently found to be one of the 10 most nutrient dense foods (even the beloved kale didn’t make it on the list!).  It contains lutein which is a carotenoid that can help protect your eyes from macular degeneration as you age.  It also contains a profile of nutrients like vitamin C, folic acid, potassium, and fiber that are important for cardiovascular health.  Because it is low in calories, but high in nutrients like vitamins A and K (as well as the ones mentioned before), romaine lettuce is a great regular addition to any diet.  And since it is so easy to find and prep it’s a super simple one to incorporate!  Obviously salads like this one are wonderful, but you can try adding it to smoothies as well! The mild flavor makes it a great, mellow addition.. you won’t even detect it in most fruit smoothies!!

Vegan BLT Salad

Ingredients
Dressing
Tempeh “Bacon”
  • 1 (8 oz) package Tempeh
  • 1 teaspoon EV Olive Oil
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Sea Salt

  • 1 head Romaine Lettuce (chopped)
  • 2 large Tomatoes
  • salt and pepper – to taste
Instructions
Dressing
  1. Place all dressing ingredients in the blender and puree until smooth
Tempeh “Bacon”
  1. Slice the tempeh in half lengthwise
  2. Rub the tempeh with the olive oil, then the smoked paprika and salt
  3. Grill until it begins to brown, about 5-7 minutes on each side
  4. When it is done let it cool a little then chop it up into bite sized pieces
Ingredients: Assemble!
  1. In a large bowl add the lettuce, tomato, dressing and tempeh
  2. Toss to coat everything with the dressing
  3. Taste, add additional salt and pepper if needed
  4. Serve and enjoy!!!
Notes
I have a vitamix that destroys/liquifies anything placed inside, so if you do not, soak the cashews for about 10-15 minutes in boiling water, then drain and discard the water. Soaking in room temp water overnight also works, I am often too forgetful to go that route! :)
