Vegan Caprese Salad 2

I never properly remember the things people say that I think are so hilarious at the time.  But the other day when Hubby came home and saw how many lettuces I had jammed into every available space in the fridge his comment sent me into a fit of laughter.  It’s why I think I am so bad at telling stories.  I am a bit jealous of Will Hunting, because having a brain that remembers everything would be pretty epic.  And even though I know that I could do really good things with such smarts, I might be most excited about the fact that I could recite hilarious events accurately.

I might have gone a little overboard on the purchasing of lettuces.  I am just so obsessed with salads right now that I couldn’t help but stock up on goodies for them.  I think my brain and my body just decide that salad is the thing to crave as soon as we start to see consistent warm weather.  So even though this one doesn’t technically contain lettuces, it is just perfect to me.

I actually ate this for dinner with some baked tempeh, and the tempeh soaked up all the vinegar goodness and made my mouth and my tummy the happiest.  Hope you enjoy it too!

Vegan Caprese Salad

Ingredients
  • 4 Tomatoes
  • 1 large Avocado (or 2 small)
  • ¼ cup Basil
  • ½ teaspoon Sea Salt (adjust up or down according to your preferences)
  • 1 clove Garlic (minced or pressed through a garlic press)
  • 2 tablespoons Red Wine Vinegar
  • Black pepper – to taste
Instructions
  1. Dice the tomatoes and avocado
  2. In a medium bowl combine them with the basil, salt, garlic, vinegar and black pepper
  3. Stir to combine
  4. Allow to sit about 5 minutes to let the flavors marry
  5. Taste, add more salt or vinegar if needed
  6. Serve and enjoy!!
