Vegan Peaches and Cream Smoothie 2

I am jealous of Georgia.  First of all, their weather is amazing.  Then they also have incredible farmers markets that sell anything and everything your heart can desire.  The restaurants are ridiculously good, and they also have a claim to Alton Brown, who I am kind of in love with.  But to top it all off, they are the peach place.  And that makes them amazing.

We have friends who live in Atlanta, we visited them about this time last year.  It was an incredible time, and as I write this I am wondering why are we not there right now?  We need to plan a trip. I am getting excited just thinking about it!!

Peaches

So yeah, peaches might be the perfect summer food.  They have that incredible sweetness, and their flavor goes with almost anything.  I am convinced of it.

After I drank this smoothie I filled the cup up with green tea, and it was incredible.  SavoryAwesomeSweetUmm, yeah!

I feel like I maybe missed the boat on this one though because I didn’t add the spinach until after I snapped the pictures.  I was thinking it was just too pretty the creamy pink/orange, but then I realized I could have called it peaches and green smoothie!! Get it!?  Let’s pretend that this would have been a clever name, and that it would have been cool, deal?

Health highlight of cashews:  Cashews contain monounsaturated fat which is very good for the heart.  They are also a good source of magnesium which is good for brain and bones.  Although nuts like cashews tend to be higher in calories, they are also satisfying because of their fat, protein, and even some dietary fiber.  Studies show people who eat nuts like cashews actually tend to be thinner than those who don’t!

Vegan Peaches and Cream Smoothie

Serves: 2
 
Ingredients
  • ¼ cup Cashews (raw)
  • 2 teaspoons Vanilla Extract
  • 2 cups Water
  • 3 cups Peaches (sliced and frozen)
  • 2 cups Spinach (optional, but tasteless.. so I encourage it!)
  • 1 cup Ice
Instructions
  1. In a blender add the cashews, vanilla, and water
  2. Blend until white and smooth
  3. Add the peaches, spinach and ice
  4. Blend until smooth
  5. Add ice to thicken, water to thin as needed (don’t go too overboard or it will dilute the flavor)
