Serves 4-6

Pink sauce is a favorite of mine, so I thought it would be good to give it a plant based, vegan makeover! So scrumptious!

I’m a big fan of just throwing the salad into the dinner, in true one pot meal style.  Arugula is awesome in here (it has a mildly peppery flavor), but you could totally use spinach instead.  It will look like a lot when you throw it in, but it will seriously shrink down.

Making an additional salad on the side is always a great idea though, so you can just make a basic salad with this to increase the vegetable intake (which is always a good thing!)  Subbing the lettuce in the basic salad recipe for green beans with balsamic vinaigrette would be an awesome complement to this dinner.

I know the soy sauce sounds really weird, but it adds a really nice savory flavor that boosts the sauce flavor wonderfully. Trust me.

Ingredients

1 lb Penne
2 tsp Olive Oil
1 medium Onion chopped
3 cloves Garlic minced
1 – 28 oz can or jar Crushed Tomatoes
½ tsp Dried Basil (fresh would be awesome if you have it! A handful would be perfect)
1 cup good Coconut Milk
¼ cup low sodium Soy Sauce
2 tablespoons Vodka (optional)
5 oz package fresh Arugula
Salt and Pepper (to taste)

 

Easy Instructions:

  • Boil pasta, cook 2 minutes less than the package instructs
  • Cook the onions and garlic in the olive oil until soft
  • Add the tomatoes, basil, coconut milk, soy sauce and vodka if using
  • Bring to a boil
  • Taste, add salt and pepper
  • Once its yummy add the sauce, and arugula to the pasta, heat through until the arugula starts to wilt
  • Serve it up, and Enjoy!

Detailed Instructions:

  • In a large pot, boil the water for the pasta
  • Add the pasta, boil 2 minutes less than the package instructs
  • Drain pasta, set aside
  • While the pasta is boiling in a medium pot add the oil, garlic and onion
  • Cook until the onion softens
  • Add the tomatoes, basil, coconut milk, and vodka if using
  • Bring to a boil
  • Taste, add salt and pepper
  • In the pot where you boiled the pasta, add back the pasta, the sauce, and arugula
  • Return to a medium low heat, heat until the arugula starts to wilt
  • Serve it up, and Enjoy!
