Vegan Quinoa Chestnut Stuffing 2

Somewhere along the lines this holiday season I got really obsessed with stuffing. It totally tastes like the holidays, and I can not get enough of it.

So I literally woke up yesterday morning thinking about stuffing.  Totally normal right?

But I couldn’t wait to cook up a big batch of chestnut stuffing.  It was about 7am, and I was telling hubby about it while we put on our 12 layers to go shovel the driveway before work.  He didn’t question the fact that I was thinking about stuffing at 7am.  (This and many other things make me think he is the most perfect man)

Since I had time before work, I got to work on this little beauty to get my fix.  Holy. Smokes.  This is good stuff.  It’s got the flavor of a super traditional stuffing, but with the creamy delicious addition of chestnuts.  So pretty much my favorite new thing.

We do all our family celebrations on Christmas Eve, and our Christmas Day tradition is to stay home and lay on the couch all day watching Christmas movies.  It is so glorious.  I have a batch of this stuffing in the freezer for me now, which is Christmas dinner all ready for me.  I am one happy girl right now!

Health highlight of celery:  Do you ever suffer from acid reflux?  Next time you do, try munching on some celery.  It is highly alkaline and rich in natural sodium, which helps balance acidity in your body.  For some, this can help relieve symptoms of acid reflux!  Celery has many other health benefits too: it is very anti-inflammatory, very good for digestion as it has been shown specifically anti-inflammatory in the digestive tract, and is high in fiber.   It also contains prebiotics, which work in conjunction with the famous probiotics by promoting the growth of the good bacteria.

Vegan Quinoa Chestnut Stuffing

Serves: 4-8 (4 main, 8 side)
  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 small Onions (diced)
  • 4 ribs Celery (diced)
  • 2 Carrots (diced)
  • 1 cup (7oz) Peeled Roasted Chestnuts (I buy these, they are awesome and easy)
  • ¼ teaspoon Dried Sage
  • 2 tablespoons Fresh Parsley (chopped then measured)
  • Salt and Pepper (to taste)
  1. In a medium pot bring the Quinoa and Vegetable Broth to a boil
  2. Reduce heat to low, put a lid on the pot and set a timer for 20 minutes
  3. While the quinoa is cooking, in a large skillet add the EV Olive Oil and the Onions
  4. Saute until the onions begin to soften, about 4 minutes
  5. Add the Celery and Carrots, continue cooking until those become tender, another 5 minutes
  6. Add the Chestnuts, Sage, and Parsley
  7. Season to your liking with salt and pepper
  8. Once the quinoa timer goes off add the quinoa to the skillet with the veggies
  9. Stir well to combine
  10. Serve and enjoy!!
