Raw Vegan Ranch Dressing 1

I think Ranch Dressing can make almost anything tasty.  In high school I had friends who ate ranch dressing on their pizza.  It always looked delicious, but pretty obsene too.

With the warmer weather kicking in (which has been so amazing, I want it to be summer forever) I have been craving lighter food, and eating mostly vegan.  It makes me feel awesome.  Perhaps I will get super hero powers like in Scott Pilgrim vs The World.

I am participating in a kind of produce share, and getting a box of fresh seasonal veggies and fruits every week.  Lately it has been loads of leafy greens, so I have been eating a lot of salads.

I wanted a creamy dressing for my salad, so I thought I would try using avocado in place of mayo and/or sour cream in a ranch dressing.  It is really satisfying, and makes eating a huge bowl of lettuce tasty and fun.  Yep, I think salad is fun.  I must have issues.

Health highlight of avocado:  though avocados are higher in fat, it monounsaturated, and people who have higher consumption of these kinds of fats tend to have a lower risk for heart disease and also tend to be slimmer!  Avocados are anti-inflammatory and contain lots of healthy antioxidants.  They are a good source of carotenoids, and because of the fat content, these nutrients are optimized for absorption!!

Vegan Ranch Dressing

Creamy, delicious ranch dressing without mayo or sour cream!! So tasty, and full of healthy ingredients.
  • 2 Avocados
  • 5 teaspoons Raw Apple Cider (or White Vinegar)
  • 1 teaspoon Fresh Dill (roughly chopped)
  • 1 tablespoon Fresh Parsley (roughly chopped)
  • ¼ teaspoon Garlic Powder
  • 1 tablespoon Fresh Chives (or green onion)
  • Salt and Pepper (to taste)
  1. In the bowl of a food processor, add all the ingredients
  2. Process until smooth
  3. Add salt and pepper to taste
