Vegan Taco Salad 1

You are not going to find me complaining about the heat.  Making jokes about my office being a 2-for-1 sauna and office? You bet.  It just means I can save the money and not splurge on the sauna desk I have been eyeballing.  (But seriously, though I kinda want that thing…)

I think I am built for the hot weather.  I can tolerate temperatures that make other people melt quicker then that guy in Indiana Jones.  But, since even I have limits, I do want cooler food and drinks in this 92 degree weather.  And whipping up a quick, light dinner just feels right at this time of the year.

I made this vegan taco salad for the first time a couple of nights ago.  And we have had it a few nights in a row now.  Partly that is due to the fact that I had 9 heads of romaine lettuce in my fridge at the start of the week.  But mostly because once I made it, I have been wanting to have it again and again.  Hubby has been requesting it be repeated as well, and after I fed him a “kale salad” a few weeks ago that was just ripped up kale in a bowl with some lemon juice on it, he hasn’t been too enthusiastic about my salads.  For the record, he was such a trooper and ate the whole thing.  So his stamp of approval on this one means I think everyone will love it!!

It’s been a long time coming that for me to make cashew things.  I see all kinds of crazy vegan creations with cashews, and I would like one of each because yum.  The only thing that has held me back is that most call for you to soak the cashews overnight.  And while I realize that’s really not that hard I also just never remember to do it.  So when I decided to make this dressing I thought I would cheat the system by using boiling water to soften the cashews.  It worked, and I was psyched!! If you want to keep them raw, you are welcome to soak overnight instead of using the water.  I just suggest you always discard the soaking water as nuts have natural anti-sprouting nutrients in them that make other nutrients harder to digest for we human folk.  And perhaps you will fall in love with cashew things like I have.  If so, let me know, because I am up to make more things with cashews.  Maybe even things with chocolate and cashews!!

Health highlight of cashews:  Cashews contain monounsaturated fat which is very good for the heart.  They are also a good source of magnesium which is good for brain and bones.  Although nuts like cashews tend to be higher in calories, they are also satisfying because of their fat, protein, and even some dietary fiber.  Studies show people who eat nuts like cashews actually tend to be thinner than those who don’t!

Vegan Taco Salad

Ingredients
Creamy Dressing
  • ½ cup Cashews
  • Boiling water
  • ½ cup cool water
  • 1 Green Onion
  • Juice 2 Limes
  • Salt and Pepper
Tempeh
  • 2 packages (8 oz) Tempeh – diced (feel free to sub for 2 cans of beans, rinsed and drained)
  • 1 tablespoon EV Olive Oil
  • ½ teaspoon Cumin
  • ¼ teaspoon Coriander
  • Salt and Pepper (to taste)
  • Hot Sauce, optional
Salad
  • 2 heads Romaine Lettuce (chopped)
  • 1 Bell Pepper (diced)
  • 1 Cucumber (diced)
  • 1 Avocado (diced)
  • 1 Tomato (diced)
Instructions
Creamy Dressing
  1. In a small bowl place the cashews and pour over enough boiling water to cover them
  2. Set aside for about 5 minutes to soften
  3. Drain the cashews and in a blender or food processor, add the cashews, cool water, green onion, lime juice, and a pinch of salt and pepper
  4. Blend until smooth
Tempeh
  1. In a medium pan on medium heat add the tempeh,olive oil, cumin, corriander and a pinch of salt and pepper
  2. Cook, stirring occasionally, until the tempeh is warm and begins to get golden brown in some areas
  3. Remove from the heat and add hot sauce, if using, to taste
Salad Assemble!
  1. In a large bowl add the romaine, pepper, cucumber, avocado, and tomato
  2. Pour over the dressing
  3. Toss to combine
  4. Top with the tempeh
  5. Toss
  6. Serve and enjoy!! (I like a couple extra splashes of hot sauce, because thats how I roll..)
