I love breakfast.  It’s a meal where I can eat chocolate things, or savory goodies, or throw some healthy things in a blender and have a balanced meal in seconds.  There is totally not another meal that is so flexible.

But I think maybe my favorite thing about breakfast is that mornings tend to be quiet, peaceful times, and there is something really zen about sitting down and enjoying a good breakfast.  It sort of sets the tone for my day.  Weekend breakfasts are the freaking best.  Because I can really take the time and enjoy the whole scene, and soak in the relaxation.

Vegan Tempeh Scramble 1

I think some people struggle with how to get veggies into breakfast, especially if you don’t eat eggs.  This is my solution, because it feels very breakfasty, is super satisfying, and also a great way for vegans or non vegans to sneak in some extra veggies in the day.  Tempeh is one of my favorite foods, and if you crumble it up, it makes an incredible scramble that is great for breakfast, or dinner!  Because breakfast for dinner can be equally as wonderful as breakfast in the morning.  And you know I like the quick meals!

Health highlight of tempeh:  Tempeh is made of fermented soybeans pressed into a cake.  Because it is fermented, tempeh is easier to digest then other soy products, and the body more easily assimilates the nutrients.  Tempeh even has increased antioxidant, anti inflammatory, and immune system function due to the fermentation process!!  The soy protein is a complete protein, and soy foods have been linked to a reduced risk for heart disease and cancer!  Even though soy can be controversial, most still agree that due to the fermentation tempeh is a healthy and great for you food!

Tempeh Scramble

Ingredients
  • 8 oz Tempeh
  • 1 cup Broccoli
  • 1 tablespoon Water
  • ¼ teaspoon Turmeric
  • 1 teaspoon EV Olive Oil
  • 1 large Bell Pepper (sliced)
  • 1 medium Onion (sliced)
  • 2 Roma Tomatoes (diced)
  • Salt and Pepper (to taste)
Optional Fixings
  • 1 Avocado
  • Hot Sauce
  • Ketchup
Instructions
If you have a Food Processor
  1. In the bowl of the food processor add the tempeh, broccoli, water and turmeric
  2. Pulse until the broccoli and tempeh are well chopped
  3. In a large pan add the oil, bell pepper and onion
  4. Saute until the pepper and onion begin to soften, about 5 minutes
  5. Add the tempeh/broccoli mixture and cook another 3 minutes, or until the veggies are cooked and the tempeh begins to brown
  6. Stir in the tomatoes
  7. Season with salt and pepper
  8. Serve up and enjoy!!
If you don’t have a food processor
  1. Chop the tempeh and broccoli into a fine dice
  2. In a bowl combine the tempeh, broccoli, water, and turmeric. Set aside
  3. In a large pan add the oil, bell pepper and onion
  4. Saute until the pepper and onion begin to soften, about 5 minutes
  5. Add the tempeh/broccoli mixture and cook another 3 minutes, or until the veggies are cooked and the tempeh begins to brown
  6. Stir in the tomatoes
  7. Season with salt and pepper
  8. Serve up and enjoy!!
