Wow.  It’s July!!  Can you believe it’s July already!?  It’s amazing and wonderful and I want to savor every minute of sunshine.

I have talked a few times about my summer love affair with veggie burgers.  I am so not alone on this I think.  Grilling is just a given in the summer.  I have been really really wanting to perfect the veggie burger.  I wanted one that was simple to make, without too many ingredients, healthy, and would hold up on the grill.  I was beginning to think it wasn’t possible.  And then, I decided to give it one more shot before resigning to continue filling my freezer with boxes of frozen veggie burgers.

And guess what!?  I think I finally did it!!!!!  These veggie burgers are the easiest ever to make, grain free, high in fiber, a good source of protein and only about 100 calories each!!!  AND! They hold together on the grill!! No wet sticky burgers here!! I’m calling that a win.

Maybe the best part though is that they are really tasty.  Have you ever had grilled zucchini?  It is one of the best foods in the world!! It gets wonderfully caramelized and is kind of addictive.

The flax is what was key here to holding these together so well.  The longer you let the mixture sit the more firm it will be, I have even tried leaving it overnight and it was still awesome the next day.

Health highlight of black beans: Aside from being delicious, black beans are also really good for you.  Their dark skin of black is a great source of many phytonutrients and antioxidants.  They are very good for digestion, and can support a healthy colon.  Black beans are also high in folate and magnesium, which are both nutrients that play important roles in prevention of heart disease.

Zucchini and Black Bean Veggie Burgers (vegan)

Serves: 4 burgers
Quite possibly the easiest, least complicated veggie burger recipe ever. Grain free, grill ready, high in protein and fiber. The texture is a little softer then veggie burgers made with bread and eggs. These end up with a similar texture to Dr Praegers burgers.
  • 1 cup shredded Zucchini
  • 1 cup Black Beans (rinsed and drained)
  • 6 tablespoons Ground Flax
  • ½ teaspoon Steak Seasoning (like this one)
  1. In a medium bowl add all ingredients
  2. Mash together with a fork
  3. Let it sit to let the flax gel everything together
  4. Grill until golden on each side (you may need to grease up the grill or the burgers to prevent sticking)
  5. Serve up however you please, bun, condiments, go to town!
  6. Enjoy!!
